Recipe of the Month - September
With the hedgerows heaving under the strain of a bumper blackberry crop, it’s a classic from the archives for this months recipe!
Blackberry and Apple Crumble
This recipe comes from the Kingcombe Centre Recipe Book published back in 2009 to celebrate 20th anniversary of the centre with recipes from friends, volunteers and staff.
2 good sized cooking apples
2 handfuls of blackberries
Golden granulated sugar to taste
4oz (100g) golden granulated sugar
3oz (75g) butter
4oz (100g) flour
2 tbsp rolled oats or muesli (minus the raisons)
• Preheat the oven to 200’C / 400’F / Gas Mark 6
• Peel the apples and chop into small pieces. Put them with the blackberries into a pie dish small enough to give a deep layer of fruit, and sprinkle with sugar to taste.
• Rub the butter with the flour until it resembles breadcrumbs and add the sugar and oats (or muesli). Spread the topping onto the fruit and bake for 30-40 minutes. Serve hot with lots of cream or ice cream and enjoy!
You can always experiment with this old favourite by adding some mixed spice to the fruit to give it more winter warmth or add chopped nuts to the topping.
